On our most recent visit to California, CaptK and I spent two nights enjoying the gorgeous scenery and wines of the Paso Robles AVA (American Viticultural Area). If you’re looking for a perfect getaway that combines stunning landscapes, rich history, and, of course, exquisite wine, look no further than Paso Robles. This enchanting region in California has a charm all of its own, and our recent wine tasting adventure thoroughly convinced me of its allure. We had the pleasure of visiting several exceptional wineries, each offering its unique take on the world of wine. Join me as I recount our delightful experience at Austin Hope, Justin, Tablas Creek, Daou, LXV, and Halter Wines.

CaptK and I approached our journey through the rolling vineyards of Paso Robles with pre-planned itinerary from our in depth research. What we found was sun-soaked afternoons and passionate winemakers creating an atmosphere of sheer delight. Here's everything you need to know before you set off on your own wine tasting adventure in this amazing area:


  1. Diverse Varietals : Paso Robles is home to over 40 varietals, ranging from robust Cabernet Sauvignons and Rhone-style blends to exquisite Zinfandels and delicate Viogniers. Be sure to try something new!

  2. Climate and Geography : With a unique microclimate featuring warm days and cool nights, wines from Paso Robles often boast intense, rich flavors. Its diverse soils add layers of complexity that can be distinctly tasted in each bottle.

  3. Wine Tasting Fees : Most wineries charge a nominal tasting fee, which often gets waived with bottle purchase. It's a good idea to check each winery’s policy beforehand.

  4. Appointment vs. Walk-ins : While a few wineries accommodate spontaneous visitors, most of the vineyards require reservations. Planning ahead ensures you don't miss out on gems.

  5. Tasting Etiquette : Start from lighter whites and progress to fuller reds. Take your time, swish the wine around your mouth, and savor the flavors. Don’t hesitate to use the spit bucket - it’s encouraged!

  6. Transportation : Consider hiring a car service or using local shuttle options to safely explore the region and its many tasting rooms. This allows you to fully enjoy the tasting experience without worries.

Austin Hope: Craftsmanship Meets Passion


Our adventure began at Hope Family of Wines, renowned for its bold and robust wines. Immediately upon arrival, I felt welcomed by the warm, friendly atmosphere. Visiting Hope Family of Wines was a recommendation from the staff at Caymus-Suisun Winery. The winery is named for it's owner Austin Hope. He studied winemaking under the tutelage of Chuck Wagner, the owner of Caymus Family of Wines.


The tasting room oozed sophistication with modern rustic decor that blended seamlessly with the breathtaking vineyard views. They offer indoor tastings and outdoor Cabana tastings. There are also tours available of the vineyards, caves and production facilities. E-Bike and ATV tours are available as well. When I sampled their flagship Cabernet Sauvignon, I was captivated by its rich dark fruit flavors and hints of spice. Each sip told a story of the meticulous craftsmanship behind it, a true testament to the artistry of winemaking. The staff shared stories about the vineyard's history, and I could sense their passion for the wine. I left with a bottle of Cab Franc and a smile.


Justin Wines: A Classic Experience

Our next stop was Justin Wines, a staple in Paso Robles synonymous with quality. The moment we stepped onto the property, I was struck by its picturesque setting. Nestled among rolling hills, the winery offers an impressive blend of sophistication and a down-to-earth vibe. There are suites, villas and a guest house for overnight stays. There is also a Michelin starred restaurant that serves seasonal menu at dinner. Charcuterie Boards at lunch options are available for purchase during the day.


I started my tasting with the Isosceles, a blend that left me in awe. The complexity of flavors, from blackberry to mocha, was absolutely delightful. The knowledgeable staff led us through the tasting experience, offering insights into what makes each wine unique. I wandered through their beautiful grounds afterward, soaking in the serene ambiance and the spectacular views that made this place truly special.


Tablas Creek: A Taste of Tradition

Tablas Creek Vineyard was a highlight of our wine tasting journey, as they proudly focus on Rhône varietals. Stepping into their property was like being transported to a charming French estate. The wines here were nothing short of extraordinary. I tasted their Esprit de Tablas, a rich blend that perfectly balanced fruit and earthiness. Another interesting wine they create at Tablas creek is Tannat. This grape is one of the oldest produced wines in the world. French Kings took wine made from Tannat as payment for taxes in the 17th AND 18th centuries. Today it is used as a blending wine with bold fruit forward reds like Cabernet Sauvignon because of Tannat's high tannin providing structure for these types of wines.


What stood out to me was their commitment to sustainability and biodiversity. During my visit, I learned about the unique process of importing grapevines from France and how they’ve successfully adapted them to the California terroir. The staff's passion and dedication to their craft reminded me of the connection between wine, land, and tradition.



Daou Winery: Striking Views and Exquisite Wines


Situated atop a mountain, Daou Winery is a true gem of Paso Robles. As we drove the winding roads through the vineyards, the panoramic views took my breath away. We enjoyed a stunning flight of their estate wines, which included the irresistible Soul of a Lion, a powerful Cabernet that showcases the depth of flavors this region can produce. As the sun began to set, casting a golden hue over the landscape, I couldn’t help but feel a sense of serenity wash over me. The blend of their meticulously crafted wines and the majestic views made this one of the highlights of my trip.



LXV Winery: An Artistic Escape

I was thrilled to visit LXV, where wine and food intertwine beautifully. Inspired by the vibrant culture of India, this winery showcases not only exceptional wines but also an culinary ambiance. Named one of the best tasting experience by Wine Enthusiast Magazine, I was so excited when their downtown Paso Robles Tasting Room could accommodate us.


The moment I entered, the colorful decor and intricate artwork caught my eye. I sampled their exquisite Viognier, which had a delightful floral character complemented by bright acidity. The staff brought the wines to life with storytelling that connected each pour to the winery's cultural inspirations. An added bonus was the small bites of cheese coated in propriety spice blends, paired beautifully with the wines. The fat in the cheese releases the intensity of the spice flavors. My favorite was the Smolder Notes Spice Blend. It pairs so well with the bold reds LXV produces. We left LXV feeling inspired and appreciated the intricate details that elevate the wine-tasting experience.


Halter Ranch Wines: Intimacy and Innovation


We concluded our Paso Robles wine tour at Halter Ranch Wines, and what a perfect ending it was! This boutique winery is known for its intimate tasting experience, making you feel like part of the family. The moment we arrived, we were greeted by the hostess, who passionately guided us through their impressive wine selection.


I tasted the Tempranillo, a traditional Spanish Red Wine. The flavor and elegance of this wine truly captured my attention. The innovative approach to their winemaking, coupled with the historical significance of Tempranillo, made for an unforgettable experience. I appreciated the dedication they put into crafting small-batch wines and how they highlight the unique character of Paso Robles.


Reflecting on a Journey of Flavors

As we drove to the San Jose Airport from Paso Robles, my heart was full of gratitude for the unforgettable experiences and delectable wines we had tasted. Each winery had its own distinctive charm, making the journey flavorful and enchanting. I left with a deeper appreciation for the craftsmanship that goes into each bottle and the stories behind the vineyards. I highly recommend visiting these wineries if you're looking for rich history, breathtaking views, and some of the best wines California has to offer.
